Mrs. Potato Head Brownies

Where there’s a potato, there’s a way.

Some would say I’m obsessed with potatoes. Sweet, russet, red, purple, golden yellow, french fries, etc. I love that it is such a versatile wonderfully starchy veggie.

Whenever I find a recipe I think, “How can I make this my own?” With trial and error, I present to you, the Mrs. Potato Head Brownie. (Sweet potatoes to be exact.) As always, it’s an easy, tasty healthy, smell good treat for the family.

2 Sweet potatoes, microwaved and gutted.

1/4 cup peanut butter (almond or cashew butter will also work)

2 tbsp cocoa (or 4 squares melted unsweetened chocolate)

1 tsp chia seeds

1 tsp flaxseed

1 tbsp almond flour

1 egg

2 TBSP maple syrup

Mix all of the ingredients in a bowl. Add to 10×10 pan. Add a dash of salt across the top. (I have found a glass cooking square works best with these) Bake at 350 degrees for 20 min. Let cool completely. Refrigerate over night. Eat cold or microwave when the sugar craving hits!

PS Don’t feel guilty if you eat the entire batch because been there done that and you are not alone.
